In an original twist on the display-kitchen theme, guests start their visit in the kitchen. The elevator that delivers guests to the restaurant opens into a wine room at one end of the kitchen. There a sommelier greets guests, offers wine samples and lead the group on a series of stops throughout the kitchen, where menu items are displayed, sampled and ordered for the meal to follow.
